Blah...

Today is my day off. I usually have Wednesdays off and I get together with my girlfriends for lunch and run errands and enjoy every minute. But, it's Tuesday and both of my girlfriends are out of town. And, even though the rest of the country is sweltering, it won't even hit 70 here today with rain showers moving through. It is gray and blah outside. I have only had to water my garden twice this year. I'm guessing my tomato crop will be dismal at best. The thought of no warm tomatoes fresh from the garden makes me feel blah. Not being able to work outside makes me blah.
I have a long list of things to get done here at home. Laundry, general picking up and cleaning, clean out the frig, mopping, vacuuming up all the dog hair, etc. The list makes me feel blah and I don't want to do them. I am a very good procrastinator. My husband thinks I'm going to be painting our new front door. Not happening today.
The reason my day off is different this week is because the big-boss dentist is on vacation for two weeks and our remaining dentist is splitting his time between the two practices and nobody is really there today. Tomorrow is a half day starting at 1:00, I'm going in at 9 to clean the sterilizers and the nasty office refrigerator. Yuck. Blah.

This is how I feel today...blah.

So, in order to procrastinate my day away, I took my sweet daughter out for a yummy lunch and then went shopping. I used the excuse that I needed to get some ham for dinner and kinda went crazy. I bought a new bedspread, some clothes for the girls, new nail polish, a bone for the dog, some other meaningless stuff AND some ham for dinner. That helped with the blahs. A little.
The new bedspread means new bedroom paint, which will probably snowball to new living room paint, new kitchen paint, a new couch, new flooring, new countertops, new cabinets...  Well, a girl can dream. I will stick to my guns and get the bedroom painted though. Later. I guess I'll just add it to the list.
I am normally a pretty motivated person. I love getting up and getting all my stuff done first thing. Just sayin.
There are two items I turn to in my moments of blahdom: chocolate chip cookies and rocky road ice cream. Oh yeah, I bought some rocky road ice cream today, too.  I LOVE rocky road ice cream. It is hands down my favorite ice cream. It does not make me feel blah. It is my friend.
Because I am trying to blog all the things that make me happy AND to honor my friend, Rocky Road Ice Cream, I am sharing my recipe for Rocky Road Brownies. They would be very good warm with some ice cream. Like rocky road.  :)

EASY ROCKY ROAD BROWNIES
One box of your favorite brownie mix.
(You can make your brownies from scratch it that makes you happy. Today, a box makes me happy.)
About a cup and a half or so - Mini Marshallows (put on however many makes you happy)
About a cup or so - Salted Peanuts - roughly chopped (ditto from the marshmallows)
About a 1/4 cup of Mini Chocolate Chips (if you have regular ones and no mini ones - use them).
Mix and bake your brownies until they are about 5 minutes from being done and remove from oven. Sprinkle with the salted peanuts, marshmallows and chocolate chips and lightly press into the batter. Put brownies back in the oven and watch very closely because the marshmallows can puff up and burn. When the brownies are done (use the toothpick trick - it's done when the toothpick inserted in the batter comes out clean) and when the marshmallows are puffy and golden brown, remove from oven and cool. Then devour. I adore mine warm and gooey but my recipe says to cool them. I think recipes are only suggestions anyway.  :)
